Is lighter better when it comes to stability and durability?

Agree mostly but with a reasonable person no issues. I have the Moses 873 wing which is very floaty and light and for SUP winging etc keeps board on its side. I am far from the most capable at 73 yo and stability is not an issue.
Again different things for different people.

I'm selling my Levitaz Cruizer nearly new, 5 uses for 1000 euros if anyone is interested.
