This article describes a wing design which is supposed to be good in turbulence:

It looks like it could be good for hydrofoil builds. Has anybody tried something like it? Or is there a reason why this would not work in water?

I think it is not directly transferable - much different Reynolds number. But interersting. We have much less problem with flow separations because denser medium
All IMO and im interested in others opinion!

As per the area I shaded in yellow, I don't think the turbulence shown correlates with the behaviour of water.
Also, the very thin wing section is doable in the drones by carrying the batteries in thin form as part of the wings, in foils supporting weight of gear and person the thin wing would buckle.
