Travel location with girlfriend January/February

Hi guys,
Probably a commonly asked question but I have after both googling and searching here not found a good alternative yet, perhaps I just suck at searching.
Me and my girlfriend want to head on a 2 - 4-week long vacation, traveling from Europe and I want to have both good kiting, a nice place, in general, to visit with decent amounts of other things around such as perhaps snorkeling, restaurants, sights, etc while hopefully not being overly crowded.
My girlfriend doesn't kite but she's (probably) open to doing a beginner course and doing it for a few days, so staying 1 - 2 weeks and kiting and then travel on to other non-kiting adventures is a definite possibility.
I'm guessing this is a pretty common situation for many people, you did anything similar and got some nice tips? I'm thinking Asia or something similar to get both warmth and it being pretty cheap to live there but it's not a must.

Thailand would work, the Hua Hin area. Cheap and things to do besides kite. Also Sri Lanka is good too, it’s a little more isolated but if you rent a tuk tuk/scooter, lots to see and do on the island. There’s a sticky I think here which gives wind by month. I’d check that out.

Cartagena, Colombia.
Romantic and charming old town.
Snorkeling trips should be available to the south with greenish water.

But, you should combine it with a short trip to St. Andres island, now that’s snorkeling paradise! Lady would be very happy 😃

Cape Town can be crowded in the popular beaches and its not a sunbathing beach lol. A lot to do though. Vietnam has plenty of wind also and there is plenty to see also. ,I have not been but Taiwan is on my list ,plenty of wind there also .
