I have an old BIC NOVA windsurfing board. It turns out it is ideal to teach people how to Wing Sup. The board is very wide and stable (165 l).
The large fin allows for some tracking but I normally teach beginners doing Downwinders.
If you have an old wide Windsurfer then learn to Wing on that first before you buy a Wing specific board.

Great advice. I have a Starboard Go board, very similar to the BIC NOVA. After 2 light winds sessions on mostly onshore winds, I am still not able to go upwind...looking forwards to figuring this out so that I can start thinking about a proper board to wingfoil. Please post any tips that might help a newbie.

The foil on the bottom will allow the board to go up wind way easier than fins even when it's not on foil. But if you're not going to use a foil. Keep the board flat, pressure center to rear of board. Point the nose and let the fins guide you. Put the wing up high to get more lift instead of pull.

I too am going to try an old floaty windsurf board for the initial learning curve, and this one has a dagger board which I hope will help a bit with tracking? I have not tried it yet, but we'll see how it goes. Can't go wrong with more volume when learning/teaching...
