They wanted the technology developed for these boats to trickle down to everyday sailors. The catamarans with wing sails were so far off from mainstream boats, that not much technology was really trickling down.
They also went away from the faster hard wings to "normal" sails. At the last americas cup they needed a crane to put the sails up every day, not very practical for the weekend warrior

Also in this article it's noted that the monohull will be able to handle the seas in the Hauraki Gulf, where the last cup was raced in very protected waters.

IMOCA 60 also has an interesting approach to monohull foiling.

All this looks (from the perspective of this kitefoiler, using single skin kites, as a very expensive way to experiment (and the wrong way to inovate). It reminds me of the new particle accelerator that they want to build by 2035 (because the 2km diam existing one is not big enough)

Too bad these guys didn’t ask your opinion first, they could have saved a bunch of money by not building these 50-knot racing boats!

Yes, the IMOCA has to heel to get the leeward foil in the water and the windward foil out of the water. The AC75 foils articulate up and down so it can be sailed level with the foil at the correct angle with the boat level.
These boats have very different applications. You wouldn't want to trust the complexity of the AC75 on a long distance ocean race.

I wonder how many of those imoca 60s are going to get though the next vendee globe. So many of those boats drop out as is due to damage caused by pushing the boat hard.

If we had one of those imoca boats back when I was crewing in Santa Barbara in the early 80's it would have been more exciting and I might have stayed with crewing. With regular keel boat it was extremely boring.
