Grigor, is there any noticeable difference between the 683S and 679?

Only the printed numbers. Both wings measure about 685mm in wingspan and have identical geometry and weight. Earlier batches of 683s/633 were a bit heavier (so 633 wouldn’t make foil float on the side), but not the later ones.
I got 679 to replace my 683s I had and it felt no different.

Ok, I am not even close to your skills however My quiver is W1000, 790 and 1100.
1100 90% of the time as all round easy.
790 for 20kn plus wind and W1000 if I want speed. 420 Stabiliser.

790 and 1000 are 100% night and day totally different foils. 1000 is a fast, race foil, super stiff in the roll, easy in the yaw, fast. The 790 is a surf foil, carvy, draggy, comfortable like a worn in sofa, playful, slow. I'd sell the 1100 and have both the 1000 and 790. 1000 has better low end than 1100.

I already asked this in another post and think it must be very personal.
I asked the same question to a Moses pro rider (BM) and he told me the 1100 starts earlier but that the 1000 has an amazing low-end once up on the foil

For me the 790 is easier to start, because the w1000 dolphin jumps if speed too low, but it's similar!
Hard to believe that 1100 doesnt start earlier?
I actually kite on w1000 with peak 5m, really nice glide!
