What IS a "watch workout" ???
Normally we use the gps for tracks and vmg and angles and speed, on some also heart rate, but what is a "workout" app?

Yes. But until now I used the swimming workout to track kitesurfing.
The surfing workout doesn't track GPS.
The downside of the swimming workout is that it will often think that you're not swimming and buzz your wrist to ask to stop/pause the activity. But as long as you ignore that, the tracking works just fine.
